Acorn Squash

I love to stock up on pumpkins and squashes during the fall season for decor but I hate throwing them out when the season is over – so wasteful. So here is a recipe on how to use and cook the acorn squash. This a dessert, highly sweet and very rich. It reminded me of the loaded sweet potatoes you get a some steak houses, which I LOVE. It is NOT the most healthiest recipe but it is yummy and gluten-free… That counts for something, right?

Acorn Squash Delight

ingredients

  • acorn squash, small
  • butter
  • cinnamon
  • brown sugar
  • OPT. marshmallows

directions

  1. slice squash in half. NOT into quarters like I did, I wish I would have kept some in half to keep the ingredients in place and not melted out.
  2. thinly slice butter and lay inside squash, dust with cinnamon. No exact amount, just whatever you would enjoy – I did lot’s.
  3. add brown sugar.
  4. bake at 375 for 30 minutes.
  5. optional: remove from oven at 25 minutes, top with marshmallows and bake for an additional 5 or longer, until the marshmallows are melted and slightly golden.

I like this recipes because when everything melts together, it gets a little crispy that is so delish with the squash.
