
I love to stock up on pumpkins and squashes during the fall season for decor but I hate throwing them out when the season is over – so wasteful. So here is a recipe on how to use and cook the acorn squash. This a dessert, highly sweet and very rich. It reminded me of the loaded sweet potatoes you get a some steak houses, which I LOVE. It is NOT the most healthiest recipe but it is yummy and gluten-free… That counts for something, right?
Acorn Squash Delight
ingredients
- acorn squash, small
- butter
- cinnamon
- brown sugar
- OPT. marshmallows
directions
- slice squash in half. NOT into quarters like I did, I wish I would have kept some in half to keep the ingredients in place and not melted out.
- thinly slice butter and lay inside squash, dust with cinnamon. No exact amount, just whatever you would enjoy – I did lot’s.
- add brown sugar.
- bake at 375 for 30 minutes.
- optional: remove from oven at 25 minutes, top with marshmallows and bake for an additional 5 or longer, until the marshmallows are melted and slightly golden.
I like this recipes because when everything melts together, it gets a little crispy that is so delish with the squash.
